Middletown Woman Wins Bobby Flay's Burger Battle

Mimi Chang's creation will be featured in Flay's restaurants beginning Jan. 1

Middletown resident Mimi Chang wowed Bobby Flay during his national Burger Battle, earning a spot for her creation on the celebrity chef’s restaurant menu.

Chang was one of three finalists appearing on the Rachael Ray show Monday to compete in Flay’s competition. Her Korean-inspired Kalbi burger with kimchee slaw and fried egg made a strong impression.

“He’s happy with the first bite,” Ray said when Flay sampled the burger. “I know that look.”

Chang said that she began cooking with her mother from a young age, and her food features elements of her heritage.

“That’s why this burger is so special,” she said. “I wanted to find a way to fuse the flavors that I’m familiar with.”

Flay called Chang’s creation a “very original burger” which “utilized something close to her heart.” His only criticism was that the egg should have been cooked less.
